Artichoke and prawn salad recipe


Yesterday I was commenting that in my neighborhood supermarket they have already put the nougat, which will lead me to make a post one of these days. And of course, they answered me that this was like salad, that you couldn't eat it outside of the summer. And the truth is that I wanted to eat it so much that I made this artichoke and prawn salad recipe.

The type of salad is the one I like the most, especially since I have known my wife who taught me how to make it in the area where she grew up. It is about mashing the cooked potato and then mixing the rest of the ingredients, which can be of many kinds.

Ingredients for 4 people

  • 3 medium potatoes, 200 g of mayonnaise, 50 g of pickles, 50 g of cooked carrots, 10 cooked artichoke hearts, 24 cooked prawn tails and 2 cooked eggs.

How to make artichoke and prawn salad

The good thing about salads is that we can throw away some ingredients that are already cooked. For example, carrots we can take advantage of the variant cans that they sell and that include carrots and pickles. And not to mention artichokes, there is no better invention than already cooked artichoke hearts. The work that saves us.

Cook the peeled potatoes until they are soft. We cool them and mash them with a fork. Add the mayonnaise and mix well. While we can also cook the eggs.

Add all the ingredients, except the prawns, finely chopped. Mix and leave in the fridge to cool down well.

We serve on plates or bowls and place the prawns on top to take to the table.
