Bourbon Beef Stew Recipe

Incorporating alcohol into meat stews is standard practice. Beef stewed with beer or a dash of cognac is traditional in almost every home. However, I must admit that this recipe for bourbon beef stew has excited me and that is why today I want to show you how to prepare it.

The smoky touch of this American version of the whiskey works very well with the meat and therefore, I encourage you to try it. The difference compared to other recipes is that I have used a greater amount of alcohol, in order to flambé it, thus increasing the roasted and smoked aromas in the final flavor of the stew.

  • Veal meat (needle) 500 g
  • Carrot 4
  • One tablespoon wheat flour
  • Onion 1
  • Bourbon 50 ml
  • Enough meat broth to cover the meat
  • Garlic cloves 3
  • Black peppercorns 15
  • Take a pinch to rectify, if applicable
  • Laurel a leaf (optional)

How to make bourbon beef stew

Chop the onion into julienne strips and the carrots into wide slices. In the express pot, put 4 tablespoons of olive oil and start to poach the onion and carrot with the garlic cloves over high heat.

We cut the meat into pieces, taking advantage to clean and remove any grit or hardness that we can find. When the onion is well transparent and before it turns color, add the beef and a tablespoon of flour.

We stir until the meat turns brown and at that moment we add the bourbon, stirring well with a wooden spoon. When the bourbon is very hot, we bring a match to flambé and let it burn for a while to evaporate the alcohol and keep the flavors and essences of this liquor.

We add meat broth in sufficient quantity to cover the pieces of meat, we incorporate the black pepper and if we want a bay leaf, leaving it to cook in the pot, covered and with two rings outside, for 18 to 20 minutes. Let cool without opening the pot and serve.
