Guacamole stuffed eggs recipe for the appetizer
This recipe for eggs filled with guacamole is ideal for snacking with friends over a few good drinks. Stuffed hard-boiled egg is a classic of this type of preparation and is usually stuffed with mayonnaise or tuna.
Today I wanted to give it a different twist by using an adaptation of one of Mexico's typical specialties: guacamole. This will not be the traditional one, as we are going to use the avocado with the egg yolk to obtain a filling with a lot of flavor and creaminess.

How to make Guacamole Stuffed Eggs for the appetizer

To start we boil two eggs (or the amount you want to make) in water for about 10 minutes. We remove them from the water and let them cool. When they are very cold, we peel them, cut them in two and remove the yolks. We reserve the clear ones that we will refill.
We put the egg yolks in a container to which we add the previously peeled, cut and crushed avocado. Finely chop the coriander and add it to the avocado. Season with salt and pepper and mix very well until everything is perfectly integrated. At this point you can add some minced chili if you want a spicy version of these eggs.
With a spoon we fill each half egg with the guacamole that we have just prepared. When we finish filling all the eggs, we cover them with a cellophane paper and put them in the refrigerator for about half an hour.
With what to accompany guacamole stuffed eggs
As I mentioned at the beginning, the eggs stuffed with guacamole are a perfect option to snack with a good glass in hand. If you prefer, you can also serve them as a starter before a main course of meat or fish.
