Green bean recipe with roasted peppers


Let's go for simple stews, like those offered by our partner María Pimientos.This Green Bean with Roasted Peppers recipe is a healthy way to combine one of my favorite toppings, roasted peppers, with some fresh green beans. With this we will get a healthy, light and complete dish, especially if we add a little diced Serrano ham.

Ingredients for 4 people.

1 kgr. red peppers, roasting, ½ kgr. green beans, fresh, 1 onion, 100 gr. Serrano ham, diced, 1 teaspoon sweet paprika, pepper, water or chicken broth, olive oil. 4 eggs (optional).


First you have to roast the peppers. To do this, we put them in a baking dish, sprinkle them with a thread of oil and a little coarse salt. Roast at 220º for 30-40 minutes, turning halfway through cooking. Take out and let cool.

Cut the beans into 2 cm pieces. Cook steamed or in plenty of water, but not too much, that they remain al dente. I prefer steamed, as they preserve their juices better.

Sauté the finely chopped onion with the diced ham in a deep frying pan or clay pot. At 10 minutes, add the peeled and cut peppers, with their cooking juices, and the cooked beans. Stir for a few minutes and cover with a little broth or water, just enough to cover the beans.

Add the paprika and a pinch of ground pepper. Cook over low heat until everything is very tender, about 8-10 minutes.

Preparation time: 25 minutes, plus 30 minutes of roasting the peppers. Difficulty: Easy


Serve in a clay pot or individual plates. If you want, you can add one egg per person and let it curdle in the oven for a few minutes, until the white has completely set.
