Fruit tart cream jelly recipe

As you can see in the image, the cream pie that I have done this weekend is from strawberries taking advantage of what I had at home, but the recipe for this cream cake and fruit jelly It works well with almost any fresh fruit or syrup, such as pineapple or peach, you can even risk mixing. Orange, strawberries, assorted berries, pineapple or peach usually look great and are quite appetizing.

To make one of these cakes you need: fresh fruit or syrup, neutral gelatin, butter, 1 roll of shortcrust pastry, sugar, cornstarch, milk and 3 eggs.

To prepare it I always start with the cream which is usually the most expensive.

Take the yolks of the 3 eggs and beat them together with three tablespoons of cornstarch, 100 grams of sugar and a large glass of milk, until they dissolve.

While you beat it, heat 2 more glasses of milk in a saucepan and add it little by little to the mixture when there are no lumps and it is lukewarm.

Then put everything in a saucepan and simmer while continuing to stir until it takes a creamy texture, at that time remove it from the heat and let it rest for a while.

While it rests, we are going to prepare the dough.

Take a tart pan and spread it with butter and sprinkle a little flour (so that it does not stick) then put the broken dough on the pan and adapt it well to its structure, when you have adapted it, remove the excess part on the edge.

Then bake the dough in the preheated oven at 225º for about 10-15 minutes. When the dough is ready, that you see the golden color, take the mold out of the oven and pour the cream you prepared earlier inside, spreading it throughout the mold so that it lies flat.

When you have a smooth surface, take the fruit you have chosen for the cake and place it on it in a decorative way, for example, the pineapple rings, peach crescents, orange gums, strawberries cut in two, ... When you have that ready you just need the gelatin, take a saucepan and a large glass of cold water and a little neutral gelatin and put it to heat until you see the gelatin dissolve, at that moment put it on the fruit leaving it covered.

Then you only have to leave it for a couple of hours in the fridge and you already have your cream cake and fruit jelly ready to eat.
