Chocolate filled macarons recipe
Macarons are in fashion and we suggest you from Dulce Diversión de Azucarera make them yourself at home. You will see that it is not as difficult as it seems.
What do we need for our macarons?
Ingredients for the macarons: whites of six large eggs (save the yolks and freeze them for another time), 400 grams of Azucarera Glacé, 180 grams of ground almonds in powder, 30 grams of bitter cocoa powder.
Ingredients for the filling: 250 grams of dark chocolate, 70 grams of butter, 20 centiliters of liquid cream.
How to prepare our macarons as a family
For a better result we will divide the process in two days, like this:
The little one chops the chocolate and the mother melts it in a double boiler. Meanwhile, the father heats the cream over low heat and in another saucepan. Add the butter and stir well until there is a homogeneous liquid. After having allowed the mixture to cool, you can add the chocolate and beat again, all children love to stir creams, and even more so if they are sweet. We will keep it in the fridge in a glass bowl covered with plastic wrap.
You have to wake up in time to finish the macarons before going to the pool: we are going to start doing something very fun that requires a bit of patience so the child starts with our help and we follow one of the adults. Using a clean and dry strainer (if possible, large), sift the icing sugar, ground almonds and cocoa into a deep bowl. These dry ingredients must be well mixed, so after sifting we can shake using a fork.
Now we must beat the whites and to do this it is better that you use the electric mixer of rods, you can make the little one participate by raising him on a chair in front of you and letting him partially hold the handle (but controlling the movement yourself). You sure love to see them hit the 'snow point'. It is time to add the whites to the point of snow to the previous mixture, stirring with a wooden spoon until forming a dough that we will introduce in the pastry bag.
I know from experience that we should not be afraid of children handling the sleeve, yes, they can hardly do it alone if they are less than 10 years old. After having prepared a baking tray covered with greaseproof paper, we will put balls of the same size (space them so that they do not stick) and we will introduce them to the oven for about 13 minutes (and at 150º).
It's time to finish our dessert and store it in an airtight container for snack. The macaron lids are left to cool and then they are assembled two by two filled with the cream that we had reserved. It is a very suitable task for small confectioners who will not be able to avoid 'finger licking'. And while one of the parents can already put the towels in the bag.
Let's recap before saying goodbye:
1.- The little one: Cut the chocolate into pieces, and the mother melts it.
2.- The father: Heat the cream a little and add the butter, mixing until it has melted.
3.- All: Mix the chocolate with the cream and store in the fridge. It is preferable to do this the day before if you can.
4.- The child with an adult: Sift together the powdered almonds, icing sugar and cocoa.
5.- The mother: Beat the egg whites until stiff and little by little add the dry mixture until obtaining a homogeneous mass.
6.- The little one with the father: With a pastry bag, they make regular and spaced balls.
7.- An adult: Bake for 13 minutes at 150ºC. Let cool and then assemble them two by two with the filling.
These macarons are a very special snack. What if you put them in a nice box and offer them to friends at the pool? All of you can boast of having prepared an authentic French dessert at home.
