Although the recipe that I bring today, some delicious triple chocolate muffins, I think it is best enjoyed in the afternoon with a good cup of our favorite coffee.
In my family we have always been very chocolatiers, and luckily my partner also shares that hobby with me. But sometimes we have little discussions because he likes soft, milk or white chocolate more, while I am passionate about black. Preheat the oven to 190ºC and prepare a tray with muffin tins. Melt the butter and let it cool slightly. Roughly chop the three chocolates with the help of a good knife, leaving large pieces.
Whisk the eggs with the butter, plain yogurt, brown sugar and vanilla essence with a few rods in a bowl. In a larger container, mix the flour with the decaffeinated coffee, cocoa powder, chemical yeast, baking soda, and sala. Add the chopped chocolates mixing well.
Incorporate the mixture of wet ingredients and work the dough with the help of a spatula or large spoon, with smooth movements, until there are no dry traces.
Distribute in the molds and bake for about 18-20 minutes, until you prick them clean with a toothpick. Let cool about 15 minutes before unmolding them.
