Inside our Lactose-Free Space, I have prepared a dish that I love: it is potatoes au gratin with lactose-free Emmental cheese from Kaiku. It is a very complete dish because it combines the hydrates of the potatoes, with the vitamins of the zucchini that are also included, and the proteins of the cheese and cream. It is not the first time that we have used a lactose-free cheese to gratin a vegetable dish, do you remember these aubergines?

The oven is needed for cooking, but for me it is not a problem even if we are in the summer, since I try to turn it on first thing in the morning and take advantage of the heat to also make some other dish or dessert.

Ingredients for the lactose-free emmental cheese gratin potato cake:

(For four persons)

  • Base: One kilo of medium potatoes, two small tender zucchini, two small onions, four cloves of garlic, olive oil, salt, chopped basil and ground black pepper.

  • Gratin: a bag of Kaiku lactose-free grated Emmental cheese, a brick of Kaiku lactose-free cooking cream, two eggs.

  • Garnish: a spring onion, a sprig of celery and a small cucumber.

How we prepare our potatoes au gratin with lactose-free Emmental cheese:

First we peel the small onions and cut them into rings, chop the garlic and put it all in a pot with hot olive oil. When they are golden we can add salt and pepper and remove from heat.

Now is the time to prepare the sauce to cover, for this we will beat the cream to cook with the eggs and the grated cheese, add a little salt and reserve a few minutes in the fridge in a covered bowl.

The skin of the potatoes and zucchini is washed, it is removed with a vegetable peeler (or potato peeler). Afterwards, tubers and vegetables are cut into not very thick slices and placed in a refractory dish greased with olive oil, starting with the potato, then the zucchini, and finally the potato again. On top of the potato layers it is drizzled with a little oil and sprinkled with chopped basil.

When we have the covered source, we will pour onions and garlic, and cover everything with the sauce. Then we will take it to the oven preheated to 200 degrees, in 45 minutes it will be ready.

Tasting:

You will surely like this dish: it is very nutritious and very tasty thanks to the use of two lactose-free dairy derivatives (Emmental cheese and cream for cooking), while at the same time you notice the touch of spices. Even without accompaniment it feels very good, but you can serve it with a garnish of spring onions, pieces of cucumber and a tender branch of celery.
