Caribbean chicken recipe, to travel with the palate

Perhaps it was for the ingredients or perhaps for using a mixture of spices from Jamaica, Curaçao, Aruba or from any magnificent destination in the Caribbean Sea area. The thing is that when we made this Caribbean chicken recipe for the first time, we already baptized it that way and we really liked the result.

What most like and surprise about this preparation is the combination of the flavors of the fruit and the spices that give life to the chicken, which is usually a dish somewhat devoid of flavor, providing us with a unique dish that is sure to please everyone. those who dare to try it.

How to make Caribbean chicken

We start by chopping the clean leek and carrots, putting them to sauté in a large frying pan or a wok with extra virgin olive oil. Once the carrots are crispy, add the pieces of chicken breast cut into large pieces.

While the chicken slices change color, we are peeling the mushrooms with a sharp lace and very carefully cut them into thick sheets and add them to the pan where we have the chicken and vegetables.

It is time to add the mixture of Caribbean spices and combine them with the rest of the ingredients while toasting a little. You will see how much aroma they give off. You can use commercial spice mixes or make your own mix as I always recommend.

I used three teaspoons of salt, three of brown sugar, 1 dried tomato, crushed in the mortar, 5 berries of black pepper, 5 of allspice, dried orange peel, nutmeg and 2 stars of anise, crushed until reduced to dust. Then I added 2 tablespoons of grated coconut dessert and a touch of nutmeg and another of cinnamon.

When the chicken was already taking color, add a peach peeled and cut into pieces and add the coconut milk, allowing the different ingredients to mix well. Let the whole cook for about ten minutes and cover so that our chicken stew rests until it is time to serve.
