Ravioli recipe with saffron cream


Today I have a very simple and very quick recipe to make. It is a ravioli with saffron cream. I must confess that when I was little I did not know what saffron was, to the point of confusing that orange coloring that they sell in the supermarket with ground saffron. Incredulous of me. But I tell you, this was when I was very little.

Ingredients for 4 people

  • 350 g of ravioli filled with whatever you like the most, 1 onion, 2 tablespoons of butter, 200 ml of cooking cream, a pinch of saffron threads and salt.

How to make saffron ravioli

We start by peeling the onion and chop it very finely. We will poach it in a pan with the melted butter.

Add the cream and the slightly crushed saffron threads. We can do it directly by rubbing them with the palms of our hands. We stir for about 5 minutes until the cream has reduced a little and the color and flavor of the saffron has been mixed. Season and reserve.

Cook the pasta in boiling salted water and when we finish we mix the ravioli, already drained with the sauce. We serve hot.

Now all that remains is to taste this dish of ravioli with saffron cream. The truth is that I would not miss the occasion and buy some very rich ravioli, ideally handmade or homemade.
