Traditional Cantabrian style sobaos pasiegos recipe

If there is something that drives me crazy, it is having breakfast with some good pastry sobaos. That taste of pure butter and with that spongy texture, means that when I manage to have this delicacy at home I will not change them even for the best breakfast in a five-star hotel.

But unfortunately you cannot always access some artisan sobaos brought directly from the pasiegos valleys of Cantabria, so nothing better than if you want to enjoy them, get down to work in your kitchen to make some delicious pasiego sobaos like the ones I bring you today.


For 18 units
  • Butter 250 g
  • Egg 250 g
  • Sugar 200 g
  • Invert sugar or honey 50 g
  • Pastry flour 250 g
  • Chemical yeast 12 g

How to make pasiegos sobados

We will start by preheating the oven to 180ºC with heat up and down and placing the capsules for the sobaos in a baking tray in which they are glued together.

Place in the blender glass with the shovel accessory or in a bowl, the softened butter together with the sugar and invert sugar or honey, beat until whitish and add the eggs one by one, mixing well until a uniform mass is formed.

Add the sifted flour mixed with the yeast and carefully incorporate it until it is fully integrated. We pour the dough into a disposable pastry bag and cut a hole with the scissors about one centimeter.

Fill well covering the base of the capsules up to 3/4 of their capacity and bake for twenty minutes or until we see the surface of the golden sobao.

With what to accompany the savory pasiegos

You would not need anything to enjoy eating a sobao pasiego prepared by you, but simply accompanied by a good glass of milk, I can assure you that you will once again remember the traditional flavors of artisan pastry.
