One of the ones that is the most comfortable for me to make are the fideuás since its reduced cooking time allows to prepare a delicious Mediterranean dish without taking more than 30 minutes from start to finish.On those occasions, I love making chicken and rabbit fideuá or seafood and fish fideuá, but today I bring you the express recipe for cuttlefish fideuá, one of the tastiest and most delicious fideuá options, in my opinion.

I have used fine noodles type hair to make this recipe, but of course, you can use if you like curved noodles of fideuá more, thick noodles, or even make this same recipe with Bomba rice, adapting the times for each of the ingredients. cooking. The result will be equally delicious.

  • Scallop noodle 250 g
  • Fish broth or stock 600 ml
  • Garlic cloves 2
  • Concentrated tomato 20 g
  • Extra virgin olive oil 20 ml

We start by preparing the sauce for which we cut the garlic cloves into pieces and sauté them over high heat in the paella with two tablespoons of olive oil. Add the concentrated tomato and when it is integrated, we mix it with the broth and let it cook to a minimum, until we are going to use it. With that liquid we will hydrate our fideuá.

While the sauce is being prepared, we take the opportunity to clean the cuttlefish well, inside and out, separating the tentacles and fins from the body. We cut the body into strips and then we split them into pieces. We remove the beak and cut the tentacles into small pieces. Sauté the cuttlefish with a little olive oil

When the cuttlefish pieces begin to brown, we add the noodles previously roasted in the oven for a few minutes and then, after mixing them with the cuttlefish and distributing them, we add the hot broth.

We let the fideuá cook over a live fire for the time indicated by the manufacturer. In my case, the packaging spoke of 6 minutes. After that time, we turn off the fire and allow the miracle of rest to take place, in which the noodles curl up curled, to the satisfaction of the cook and the diners.
