Easy bagel recipe, New York's most popular muffins


Until a few years ago, bagels were those rolls with a hole in the center that appeared in American movies, but we no longer care to see them in many large stores. Making them at home is a breeze with this easy bagel recipe and the result has nothing to do with industrials. Light years.

Perhaps the most peculiar thing about the bagel is that, in its preparation, it is blanched for a few seconds before taking it to the oven. This gives it a higher crumb density and a slightly crisp exterior. New Yorkers love bagels for breakfast and there are places to grab them all over the city. If you want to prepare them easily, here is our recipe for homemade bagels.


For 8 units
  • Wheat flour 450 g
  • Warm water 125 ml
  • Warm milk 125 ml
  • Fresh baker's yeast 15 g
  • Salt 8 g
  • Sugar 5 g
  • Egg white 1
  • Melted butter 30 g
  • Sesame seeds
  • Sunflower oil
  • Yolk 1
  • Milk 5 ml

How to make homemade bagels

We crumble the fresh yeast and mix it with the flour, the salt, the sugar, the melted butter, an egg white, the milk and the water. Knead for a few minutes until obtaining a smooth and shiny dough.

Grease a large container with a pinch of sunflower oil, put the dough in it, cover with a clean cloth and let it rest for about an hour. The dough has to rise to double in volume.

We degas the dough by inserting the fist into it a couple of times. Knead it gently and cut into eight portions, making sure they are the same size. We roll each portion and form the bagels, with its hole in the center. The bigger the eaujero, the better, because it will close in the oven.

We let it rise again for ten minutes. Meanwhile, fill a large saucepan with plenty of water and bring it to a boil. We blanch each bagel in the boiling water for ten seconds, the time it takes to drop, flip, and remove.

Place the bagels on a baking sheet covered with greaseproof paper and brush with a mixture of beaten egg yolk and a little milk. Sprinkle with sesame seeds (optional) and cook in the oven, preheated to 210º C, with heat up and down, for 20-25 minutes or until lightly browned. We remove and let cool before consuming.

With what to accompany the homemade bagels

Homemade bagels can be eaten as is or filled to taste. One of the most popular combinations is cream cheese and smoked salmon, but the possibilities are endless: goat cheese cream and roasted peppers, tomato salad, arugula and avocado and much more.
