Wash and dry chicken thighs well with absorbent paper. Season with salt and pepper and go through a plate with wheat flour, coating slightly on all sides. Heat a little extra virgin olive oil in a frying pan and fry the thighs, turning so that they brown evenly.
Peel the onion and cut into julienne strips, that is, into thin strips. Add to the pan and cook over low heat for 15 minutes. If we cover the pan we will speed up the process. When the onion begins to take color add the broth and cook over medium-high heat for 10 minutes.
As soon as the broth evaporates and the chicken begins to lightly grip the bottom of the pan, add the coffee. Mix well and give a last boil to the stew for five minutes before removing and serving.
