Low sugar homemade muffins recipe: healthier, but just as delicious

One of the most classic recipes of Spanish pastries is that of cupcakes. Small bites of pleasure, fluffy and tender, that have accompanied us all our lives and to which we have given a twist. This recipe for homemade low-sugar cupcakes is a healthier version of the traditional one. Less sugar, yes, but not less flavor.

We have conducted tests with different amounts of sugar and concluded that using 50% less sugar is the limit we can reach without sacrificing the result. Lovers of not very sweet sweets, these homemade low sugar cupcakes will delight you from the first bite. For others, it may take a little time to get used to the palate, but we are sure that you will end up succumbing.

How to make homemade low-sugar cupcakes

We beat the eggs with the sugar with electric rods until they turn whitish, creamy and double their volume. Approximately 6-7 minutes. Without stopping to beat, add the oil in a thread and then the zest of half a lemon.

Then pour the milk and, without beating to avoid splashing, mix just enough to unite. Finally we add the flour, the salt, the ground cinnamon and the sachets of gasifying agent, sifting previously. We mix gently so that the air incorporated with the shake is not lost.

On the gasifying sachets. These come in pairs, one purple and one white. Four pairs of envelopes must be used, that is, eight in total: four purple and four white.

Let the dough rest for an hour in the fridge. Meanwhile we prepare 24 special paper capsules for muffins and put them in a specific mold for them or in flaneras. So they keep the shape. We also preheat the oven to 220º C, with heat above and below and without air.

Fill the molds without reaching the edge and put in the oven, at medium height, for 16-18 minutes. After 5 minutes of being in the oven, lower it to 200º C and continue cooking until the indicated time is complete. We remove from the oven and let it warm before unmolding and serving.

Homemade low-sugar muffins are perfect for snacks, especially if we accompany them with a glass of fresh milk. They have the perfect sweet spot for those who like not-too-sweet treats.
