The first thing to do to make a good round baked is to buy a good round. Logical, right? Although the truth is that I still haven't found a album that has let me down. In this case I have bought a round of white veal.
The way of making it uses a technique called braising or braising and it is also "cooked" in the oven.
- A round of 1.5-2 kg, 4 small carrots, 2 onions, 2 garlic, 4 medium tomatoes, olive oil, 200 ml of white wine, bay leaf, thyme, a few grains of black pepper, parsley and salt. Garnish some fried potatoes into pieces.
Baked round preparation
First we clean the round, removing the thickest since it contributes absolutely nothing to the recipe.
Next we peel the garlic and cut the onions and carrots into pieces.Season the round and put everything in a oven-resistant casserole. We introduce in the oven at 180 ºC until it begins to take color.
At that time we add the white wine, the tomatoes in quarters, and the seasoning herbs. Cover and return to the oven for about 2 hours at 170 ºC. We check that this is done by inserting a skewer and if the skewer is hot when removing it.
Take out, leave about 10 minutes and cut into slices. The vegetables are passed through a mixer to achieve the sauce. If necessary, add some salt to the sauce and serve.
