We start by marking the round of turkey in a pan greased with a little extra virgin olive oil. On high heat and turning so that the meat is browned on all sides. Once ready, we put it in the pressure cooker.

We wash and peel the carrots, we also chop them. We peel the apples, we core them and we cut them. Peel and cut the onion into wedges. Add the vegetables to the pot, along with the rosemary branch, and water with the broth. If it is not seasoned, we will have to season the whole. Otherwise we don't touch it.

We close the pressure cooker and cook over high heat for 15 minutes, counting from the moment the valve (in position number 2) begins to let steam pass. After this time, remove the pot from the heat and let it rest. When all the steam has come out, we open it and remove the round.

We pass the vegetables and the broth through a kitchen robot and grind with a hand mixer. We pass the sauce through a strainer to make it very fine, but this is optional. If we want to thicken it, we add a little cornstarch while heating it.
