Speculoos reindeer, Christmas cookies to make with children

The month of December begins and we start thinking about the Christmas decorations, the jpgts, the menus and the sweets typical of this time. I start my Christmas recipes with these cute speculoos reindeer, some Christmas cookies to make with children, which I find very nice and, what is better, with a very easy decoration for the little ones in the house to have a blast during a while.

And regarding speculoos cookies, just say that they are one of my favorites and with this recipe they are delicious, very crunchy and with a delicious spicy flavor. I use a mixture of Speculoos already prepared, but if you want to make it at home, you only have to mix 1 heaping teaspoon of cinnamon, 1 level teaspoon of ground ginger, a pinch of ground nutmeg and a pinch of ground cloves.

Ingredients

For 24 units
  • Wheat flour 350 g
  • Brown sugar 250 g
  • Butter 250 g
  • Eggs 1
  • Spices for speculoos 10 g
  • Chemical yeast 6 g
  • Mini chocolate sprinkles (red color)
  • Chocolate pastry pencil (or 30 g of dark chocolate)

We put the softened butter in the bowl of the mixer and add the sugar, spices and the egg, mix well with the shovel and add the flour mixed with the yeast. we continue mixing until we have a smooth dough. You can also do this whole operation by hand. We wrap it in film and store it in the refrigerator for at least 12 hours.

We take the dough out of the refrigerator, wait a few minutes until it softens a bit and spread it with the rolling pin on a floured surface. We cut the cookies with a round pasta cutter or with the rim of a glass and we put them on a baking sheet covered with greaseproof paper. We put the tray in the refrigerator for at least half an hour. Preheat the oven to 180º and bake for about 12/15 minutes until golden brown.

We let the cookies cool and decorate them. If we use normal chocolate, we melt it in the microwave taking care not to burn it, we put it in a pastry bag with a fine nozzle. If we use the pastry pencil we work directly. We put a drop of chocolate in the center of the cookie and paste a sprinkle, we draw two points very close to the nose and starting from them we draw the horns. We let the chocolate harden.
