Kidneys with onion. Chopping recipe

It is not a recipe that usually does a lot, because I do not always find them "trustworthy", but occasionally preparing kidneys with onion to snack on is a dish that I love. I suppose that having eaten them as a child helps a little to accept them, because not everyone is used to eating shellfish.

For the final result to be excellent there are only two tricks: clean them thoroughly, so that they do not have unpleasant flavors, and mix them with a lot of onion, in this way a spectacular sauce will be formed in which you will love to dip a good slice of bread.

Ingredients

  • Lamb kidneys 500 g
  • Dry white wine 1 glass
  • Large onion 3
  • Extra virgin olive oil
  • Vinegar
  • Salt

How to make onion kidneys

We start by cleaning the kidneys by mixing them with vinegar and salt. We must rub them to clean them well. After we let them rest for about ten minutes, we rinse them and repeat the operation again. We chop them up.

We put a little oil in a pan and sauté them slightly for a few minutes, so that they release their juice. We take them out and wash them in a colander with cold water, so that they lose the smell of the juices. We reserve them.

Peel the onions and carve them. We fry them in a frying pan over very low heat until they are candied and acquire a golden color. Add the already sauteed and drained kidneys, along with a glass of dry white wine. We rectify salt, give them a few laps and serve.

With which to accompany the kidneys with onion

This recipe for onion kidneys is ideal to serve as a pica pica. If you want, you can sprinkle it with chopped parsley just before bringing it to the table. Do not forget to accompany them with a good loaf of bread, because I assure you that you will not want to leave even a pinch of sauce.
