Chicken risotto curry, the recipe with exotic flavor to leave everyone delighted


I really wanted to try this combination in which to use the Italian technique to make risotto with the Asian influence of curry spices, and after preparing it I was delighted. That is why I present you this recipe for curry chicken risotto that you will surely like as much as I do.

Also, to make the final ice cream instead of using butter and Parmesan cheese to make a kind of pomade as I usually do in other risotto recipes, I have added thick coconut cream that has given a creamy touch and a delicious texture to the risotto.


For 2 persons
  • Chicken breast in cubes 2
  • Arborio rice or carnaroli 250
  • Spring onion 0.25

  • Chicken soup 400 ml
  • One teaspoon ground curry
  • Tomato 0.5
  • Italian green pepper 0.5
  • Coconut milk 100 ml
  • Sultanas raisins a handful
  • Chives for garnish

How to make chicken curry risotto

Chop the chives and sauté in a saucepan with a tablespoon of olive oil. When it begins to fry, add the rice and curry powder and give it a few turns. Add the tomato and the pepper, stir well and add the drizzle of white wine and stir until it evaporates.

From there, we are adding the chicken broth ladle by ladle, without adding more broth until the previous one has been absorbed. We also incorporate the raisins that will be rehydrated with the cooking itself, stirring continuously while the rice absorbs the broth and releases its starch.

On the other hand, we cut the chicken breast into pieces and brown them in a pan only until it changes color, reserving it until the rice remains a couple of minutes to be just right. At that time, we add the chicken pieces to the risotto so that they also take on the flavor of the curry.

To finish, we add two tablespoons of thick coconut cream and with them we butter the risotto while we stir quickly until it has a creamy texture. We take to the table immediately and decorate each plate with a little chives.
