Marinated chicken rolls stuffed with pepper: recipe
Without a doubt, chicken is one of the noblest white meats since you can prepare it in a thousand ways and combine it with an infinity of other ingredients and spices to give it a very interesting twist. Depending on the cuts you want to work with, you can enjoy a recipe that will be totally different from any other.
Today I propose you one of my favorite recipes with these marinated chicken rolls stuffed with pepper. It is a perfect dish for this season that we want to eat meat full of flavor without negatively affecting our physical and mental health.

- Chicken breast 2
- Purple Onion 50 g
- Extra virgin olive oil 60 ml
- Paprika powder 20 g
- Ground cumin 10 g
- Balsamic vinegar 15 ml
- Garlic clove 1
- Green or red pepper 50 g
- Ground black pepper

To prepare the marinade we will place the olive oil in a bowl together with the balsamic, the cumin, the paprika, salt and black pepper. Chop the red onion and the garlic clove. We add them to all of the above and stir very well. We reserve.
Now we are going to clean the chicken breasts very well of any trace of fat to cut them in half horizontally. We open them and place them in a refractory of the appropriate size to fit all of them. Pour the marinade over the open breasts, cover with aluminum foil and leave to marinate for at least two hours.
Meanwhile we devein the pepper and cut it into very thin julienne strips. After two hours we remove the breasts from the marinade without discarding it and put them on a board. In its center we place the julienne of pepper and roll up the breasts. We close each roll with a toothpick. We put them back in the refractory with the marinade. Bake at 180ºC for about 25 to 30 minutes.
What to accompany the chicken rolls stuffed with pepper
These delicious peppers-stuffed marinated chicken rolls are best enjoyed hot with a side of rice or another carbohydrate to which you can add the same sauce as the marinade. Additionally you can prepare a roasted vegetables and serve everything with a good glass of light red wine.
