It is already customary in my house every year around this time to make a Roscón de reyes and although it is laborious and you need a little patience with the yeasts, it is not comparable to many that sell, very artificial for my taste. So I wanted to share with you my recipe for Roscón de Reyes in Thermomix, since thanks to this food processor, its preparation is made much easier, because we avoid doing the kneading by hand, which, to be honest, costs its own.

In this recipe we are going to prepare a previous sponge that will be like a kind of sourdough, which will help us to check that our yeast is active and working as it should, because there is nothing more frustrating than spending work and raising hours to later see that our roscón does not want to go up. This step costs nothing to do, just fifteen more minutes and the results are much better than when everything is mixed at once.

  • Warm milk (for the sponge) 90 ml
  • Fresh baker's yeast (for the sponge) 10 g
  • Strength flour (for the sponge) 185 g
  • Sugar (for the sponge) 10 g
  • Force flour (for the dough) 465 g
  • Butter at room temperature (for the dough) 100 g
  • Sugar (for the dough) 125 g
  • Fresh baker's yeast (for the dough) 15 g
  • Egg Size L (for the dough) 2
  • Warm milk (for the dough) 110 ml
  • Orange blossom water (for the dough) 30 ml
  • Salt (for the dough) 6 g
  • Lemon zest to taste (for the dough)
  • Orange zest to taste (for the dough)
  • Egg to paint (for the dough) 1
  • Candied fruits to taste
  • Moistened sugar, to taste

How to make roscón de Reyes in Thermomix

To make the sponge, mix the warm milk in the Thermomix glass, with the teaspoon of sugar, the yeast envelope and the strength flour. Beat 20 seconds at speed 4. Leave it in a warm place covered with film for fifteen minutes or until doubled in volume. To find out if it is, put it in a container with warm water and check if it floats. If so, it is ready and ready to go. Wash the Thermomix and dry it very well.

To prepare the flavored sugar, we will grate half a lemon and half an orange, taking care that there is no white part. Pour the sugar into the Thermomix glass and add the zest. Put 20 seconds at progressive speed 5-7-9. Reserve.

To make the rest of the dough in the Thermomix glass, add the flour. To avoid having to sift it previously, we will put it at speed 6 for 1 minute, so the flour will be aerated and without lumps as if we had passed it through the sieve.

Mix the warm milk with the yeast to undo it a little, add it to the flour. Add the eggs, the flavored sugar, the salt, the orange blossom water or the liquor, the butter at room temperature in pieces and finally the sponge or sourdough to the glass. Mix 45 seconds at speed 6. Then knead 3 minutes at spike speed.

Take the dough out of the glass for a bowl slightly greased with a little oil and leave it to rise in a warm place covered with a cloth for approximately six hours. When the dough has doubled in volume, divide it into two portions to knead two small roscones or leave it that way for a larger one.

Give it a thread shape, the dough must be elastic and not shrink. Place on parchment-lined baking sheets. Put in the center a plate greased with margarine or something that resists heat such as a flan or ramekin, so that the hole does not close. Let it rise like this with the form for two more hours.

When they have doubled the volume, paint with the beaten egg carefully, place the candied fruits and sprinkle with slightly moistened sugar. Bake at 160 degrees for approximately thirty minutes.
