Sautéed cuttlefish and chanterelles, a recipe to enjoy autumn products


Being so healthy and light the cuttlefish and being in the middle of the chanterelle season, it occurred to me to prepare a delicious skillet, a recipe for sautéed cuttlefish and chanterelles, a recipe to enjoy autumn products to which I finished giving the special touch with caramelized onion.

The result is a tasty, nutritious, light dish and above all, so easy and so rich that I plan to prepare it more than once this fall. Try it and you will see what joy you take and how much you like it in your homes.

How to make sautéed cuttlefish and chanterelles

To make the caramelized onion, we chop it in julienne strips, and we put it over low heat in a pan with olive oil, adding a pinch of salt and another of bicarbonate so that the caramelization process is quick. Remember the tricks that I told you to make caramelized onion quickly.

While the onion is cooking, we clean the cuttlefish and remove the tentacles and the beak. The body and the fins, we cut them into long and thin strips. When the onion has consumed the water (at first it loosens a lot), add the cuttlefish and sauté it with the onion.

We clean the chanterelles well with a moistened kitchen paper and cut them into strips. Add the pieces of mushrooms and let the whole cook for ten minutes, so that the chanterelles are very tender and the cuttlefish are soft.

Add a splash of white wine, sprinkle with chopped parsley and turn up the heat, letting the sauce reduce for two minutes. Garnish with a sprig of thyme and serve very hot with a few slices of bread because I assure you it will be essential.

This recipe for sautéed cuttlefish with chanterelles is a good dish for lunchtime and also for dinner. With a light dessert or a yogurt with fruit, we do not need more for a tasty and complete meal.
