To start the recipe we are going to cut the chicken breasts into squares about 2 centimeters long. Heat a little olive oil in a frying pan and roast the chicken pieces for about five minutes, over medium heat, until they are well browned. Halfway through cooking season with the fine herbs, salt and pepper to taste. When it is ready we remove from the fire and let cool.
Now we are going to cut the avocados in two, remove the bone, the skin and cut them into cubes of a size similar to chicken. Chop the onion and place it together with the avocado in a bowl. Add the chicken, warm or cold, the mayonnaise, the olive oil, salt and pepper. We stir very well. We heat the bread and make the sandwiches. If you wish, you can add a lettuce leaf or a little cheese.
