Lavender has an aroma that makes you fall in love and combining its flavor with chocolate is a very good idea. Of course, if you do not have four pastry rings you can also make a cake and serve a portion to each diner.

We start by making the cake. We beat the softened butter with 35 g of sugar. Add the cocoa and stir. We crack the eggs separating the whites from the yolks, we reserve two of the latter for another preparation and incorporate the other two, one at a time.
We melt the chocolate in a water bath and add it too. Lightly mount the whites with 50 g of sugar and incorporate them little by little. We line a 20 cm mold with sulfurized paper and pour the dough into it. We cook it in a preheated oven at 180ºC for about 25 or 30 minutes.
To make the mousse, we cut the chocolate and put it in a bowl. Bring 100 g of cream to the boil, add and stir until the chocolate melts. We assemble the remaining cream and incorporate it slowly.
When the cake has cooled, we remove it from the mold and cut 4 discs with some pastry rings. We put them in a source, leaving them inside the rings and fill them with the mousse. We freeze them for at least 4 hours. Unmold and serve watered with honey.
