Shortbread with cottage cheese. Recipe

My wife had been asking me for a cheesecake for a few days, which I did not feel like doing much. Well, we walk around these very often. In the end I made something similar to a cheesecake but using a different element. The shortbread to which I have put a top of cottage cheese thinner than what is a normal cheesecake.


  • For the shortbread, 250 g of butter, 250 g of flour, 150 g of sugar and 75 g of rice flour.
  • For the top of cottage cheese, 350 g of cottage cheese (you can substitute cream cheese), 110 g of sugar, 30 g of flour, 2 eggs and 100 ml of cream.

How to make shortbread with cottage cheese

We will start with the shortbread since it will be the base of this kind of cake that we have made. As you will see, both the base and the filling are similar in how simple they are. You just have to mix.

Well, we will do just that. We will mix all the ingredients of the shortbread (with the butter in ointment) until we obtain a dough. It does not have to be fine, in fact it is best to work it very little.

We spread the dough through the mold and press it equalizing it across the entire surface.

Then we make the top. Mix the cottage cheese with the sugar, the flour, the two eggs and the cream without introducing much air. We put the top on top of the shortbread.

Bake at 150 ºC for 40 minutes or until golden. Let cool in the oven.

The shortbread recipe was given to me by Trotamundos long ago because I was looking for a really good recipe and I must say that this is the best I have eaten in a long time. The good thing is that we can eat it just as some butter cookies as we can put different tops on it.
