With yesterday's party, this week we can enjoy three days of mini vacations. Surely many of you have taken the opportunity to go on a trip, but those of us who stay here have to cook anyway. What laziness! We have no alternative but to look for easy and quick ideas with which we do not have to complicate ourselves too much in the kitchen.

For this reason, for today's weekend snack, we propose seven delicious combinations of bread and mozzarella with which you are going to enjoy a lot. If it is that sometimes we do not realize that we can get great dishes with few ingredients and that, as they are quick to make, they will leave us free time to enjoy with our family.

1. Beef sandwich with sautéed pepper, onion and mozzarella

  • Ingredients: Sweet onion or white onion 1, Red pepper 1, Small veal fillets 2, Tomato on the vine or other variety 1, Fresh Mozzarella 1, Dried oregano, Dried thyme, Ground black pepper, Salt, Extra virgin olive oil.

  • Preparation: First you have to let the meat temper a bit. Season with salt and pepper, add a little oregano and thyme and set aside. Cut the onion into rings or thin julienne strips and also the pepper, removing the seeds. Heat a little olive oil in a frying pan and add the onion with a pinch of salt. Cook over medium-low heat, stirring constantly, until caramelized to taste. We can make it for twice as long on low heat so that it is really sweet and toasted, if we feel like it. Add the pepper and sauté at medium temperature until it is very tender, or leaving it with a crisp point -to taste-. Remove. Cut the piece of bread and open in two halves. Cut the tomato and the cheese into slices - it will remain, save the soil to preserve it. Cook the meat in the same pan or on the grill, making sure it is cooked to the point. Remove. Open the bread and brown on the same grill, with a little oil if necessary. Press to compact it a bit. Assemble the sandwich with a seasoned tomato base, the meat, the vegetable mixture and the cheese. Give a hit of pepper and add oregano to taste. Close and go through the grill or griddle again to serve hot.

2. Pepper and mozzarella tart

  • Ingredients: Puff pastry 250 g, Color 2 peppers, Mozzarella cheese 250 g, Red onion, Olive oil 30 ml, Salt, Ground black pepper

  • Preparation: To make the recipe we are going to cut the peppers into similar size julienne strips. We place them in a pan with olive oil and sauté them, over medium heat, for about 10 minutes. Meanwhile we spread the puff pastry to which we shape the mold that we will use. When we have it ready, we place it in the mold previously greased or covered with non-stick paper. We cut the mozzarella cheese into pieces with which we cover the bottom of the cake. Season with salt and ground black pepper to taste. We pour the mixture of peppers on the cake. We cut the red onion into julienne strips that we add to the cake. We drizzle with olive oil. We put in a hot oven at 180ºC for about 30 minutes.

3. Pizza sandwiches with bacon and mozzarella

  • Ingredients: Pizza dough 250 g, Bacon sliced ​​12, Fresh Mozzarella 150 g, York Ham 100 g, Tomato concentrate 75 g, Dried thyme 3 g, Sesame seeds 3 g, Egg 1, Salt, Ground black pepper

  • Preparation: We are going to spread the pizza dough (which you can make yourself or buy already made) to give it a slightly rectangular shape. We spread the tomato puree that we season with the thyme, salt and pepper. If they use industrial tomato puree, it is better not to abuse the salt. We place the bacon slices in the central part of the dough as well as the ham previously cut into pieces. We cut the cheese that we add to the rest of the ingredients. Season with a little more thyme, salt and pepper to taste. We cut the sides of the dough that we fold towards the center to form a set. We beat the egg with which we cover the dough. Bake at 180ºC for about 20 to 25 minutes.

4. Crunchy sandwich of mozzarella in carrozza with quince

  • Ingredients: 2 sliced ​​loaf bread, 60 g fresh mozzarella, 4 sliced ​​quince paste, 1 eggs, 200 ml milk, breadcrumbs, Parmesan cheese 10 g, dried oregano to taste, dried thyme to taste, ground black pepper, Extra virgin olive oil, Salt.

  • Preparation: Cut two slices of bread per person, about a finger thick, making sure they are even. Drain the mozzarella cheese and slice into not too thick portions. Slice the quince paste and assemble the sandwich alternating both ingredients. Add black pepper and a small touch of salt on the quince. Beat the egg with the milk and a dash of black pepper in a bowl. Arrange the breadcrumbs mixed with Parmesan cheese, oregano and thyme on another plate. Wet the slices of bread on both sides, letting them soak but not overdoing it. Be careful that the filling does not come out. Drain slightly and pass through the breadcrumbs, pressing well. Shake off excess bread. Heat olive oil in a frying pan and cook over medium heat on both sides, until golden brown to taste. It should be crispy on the outside and the cheese should be melted. Serve immediately.

5. Chorizo ​​and mozzarella stuffed buns

  • Ingredients: Roll 2, Mozzarella Cheese 150 g, Sausage 80 g, Creme Fraiche or fresh cream 30 g, Onion 50 g, Fresh parsley leaves, Olive oil, Salt, Ground black pepper.

  • Preparation: We are going to cut the central part of the buns in such a way that we are going to make like boats. We remove the largest amount of crumb well. We booked. Finally, we cut the chorizo ​​as well as the onion, the mozzarella cheese and some fresh parsley leaves. Mix the crème fraiche with the chorizo, onion, parsley and half the cheese in a bowl. 6. Tomato and mozzarella toasts with Bologna mortadella

  • Ingredients: Loaf bread in large slices 2, Branch tomato, pear or other tasty variety 2, Fresh Mozzarella 1, Bologna mozzarella in slices 4, Extra virgin olive oil, Capers, Ground black pepper, Coarse salt.

  • Preparation: Cut the slices of bread, about a finger thick. Paint lightly with olive oil and toast to taste or leave as is. Cut the tomato into thin slices. Drain the liquid from the mozzarella and cut into slices of about the same size. Spread two or three tomato slices on the bread and add a little coarse salt. Place the mozzarella on top, add black pepper and drizzle with a thread of olive oil. Arrange the Bologna mortadella slices on top, folding them on themselves. Top with some drained capers and add a little more pepper or olive oil to taste if desired. Serve preferably at the moment, although they can be stored for a few hours in the fridge well covered.

7. Sandwich of marinated beef, mustard and arugula

  • Ingredients: Mayonnaise 5 g, Dijon mustard 2 g, Marinated beef 100 g, Fresh Mozzarella 20 g, Avocado 1, Tomato 1, Arugula, wholemeal or seed bread, slices 2.

  • Preparation: The preparation of this sandwich is practically non-existent, which I love when I am short of time or want to get into cooking. We just have to slice and cut the ingredients, prepare the sauce, assemble the sandwich and eat it. We start with the sauce. To do this, in a small bowl, mix the mayonnaise sauce with the mustard. We stir until obtaining a homogeneous sauce and reserve. We can make more quantity and save it for other elaborations. To taste. Next, we remove the mozzarella ball from the whey in which it is immersed and cut four slices. We keep the excess in the serum in the fridge. We cut the avocado in half, lengthwise, and separate the two halves. We remove the skin from the boneless half and cut four slices. Finally, we wash the tomato and cut three or four slices. Once all the ingredients are ready, we assemble the sandwich. Spread the mustard mayonnaise on one of the bread slices and layer the ingredients in the following order: marinated beef, mozzarella cheese, avocado, tomato and finally arugula (to prevent it from becoming soggy). We cover with the other slice of bread and that's it.
