We started by cleaning the criadillas and the brains. To do this, we remove the web that covers the criadillas and laminate them. We also clean the brains, removing the veins and cut them into pieces. We salt and we go through flour.

We put oil to heat in a pan and fry the criadillas and brains in batches until they are well done. We put them on a wooden board and chop them with a sharp knife. We also fry the Iberian ham taquitos. In a large bowl we beat the eggs with salt and add the criadillas, the brains and the ham.

We put a little oil in a non-stick pan and add the contents of the bowl. With the help of a spatula we shape the tortilla, making sure that it is well curdled on both sides. We serve immediately.
