I must admit that I did not know this dish and when I saw it on the Campo di Fragole page, it seemed very appetizing and easy to make; so I put to it and it is really worth it, because the strawberry gives it a point of acidity that compensates for the sweetness provided by the cream.
Ingredients: Pork tenderloin, 4 tablespoons cane sugar, 3 tablespoons water, 125 grams of strawberries and 75 milliliters of cream.
preparation: Pass the sirloin on the grill or in a pan with a little extra olive oil until it is golden brown. In addition, in a frying pan, prepare the caramel with sugar and water, in principle it is left over high heat and when it starts to boil the heat is lowered a little. Cut the meat diagonally and pass it well in the pan with the caramel so that it caramelizes on both sides. Plate the hot meat and top with the sauce.
For the strawberry sauce: crush the strawberries with the cream.
