Spiced pork tenderloin with vegetables and quinoa. Recipe

Pork sirloin is an ingredient that I use a lot in my kitchen, both baked whole with dehydrated fruit, and in casserole, it lends itself to very tasty dishes and also at a correct price. For today's Sunday meal I have opted to make it sautéed, well seasoned with a marinade and aromatic herbs, and thus the result has been a delicious spiced pork tenderloin with vegetables and quinoa.

A simple dish that you can do both for daily use and for a more special day, since it has no complications whatsoever, and accompanied with quinoa, which provides it with a nutritious plus of the good properties of this cereal.

  • Pork tenderloin 1
  • Carrot 2
  • Zucchini 1
  • French onions 6
  • Garlic clove 2
  • Sweet paprika 6 g
  • Ground cumin 1 g
  • Extra virgin olive oil 45 ml
  • Teriyaki sauce 60 ml
  • Quinoa 180 g
  • Fresh thyme to taste
  • Fresh rosemary to taste
  • Salt and pepper to taste

How to make spiced pork tenderloin with vegetables and quinoa

We will start marinating the diced sirloin for one hour with teriyaki sauce. When the time passes, chop the vegetables in julienne strips and the French onions in quarters. We put a thick-bottomed pan with the olive oil to heat and sauté the meat until it is sealed, add the onions and minced garlic cloves, and fry for a few minutes until the onions are transparent.

Then we add the vegetables in julienne and sauté everything together until they are soft, season with salt and pepper and add the paprika and cumin, as well as the rosemary and chopped fresh thyme. Pour 120 ml of water into the saucepan and cook for 25 minutes.

While we are making the quinoa as a garnish. We wash the cereal in a strainer, put it in a cup to measure the quantity and in a frying pan, put a little olive oil to heat and toast the washed quinoa for a minute. Add twice as much boiling water and salt, and let it boil. We lower the heat to a minimum and cook for 15 minutes.

What to accompany the spiced pork tenderloin with vegetables and quinoa

To enjoy this spicy pork tenderloin with vegetables and quinoa, we serve the cooked cereal as a base and add a portion of the spiced meat with the vegetables on top. You can prepare the meat the day before and simply make the cooked quinoa at the moment of eating and so we have a complete dish in just 15 minutes.
