Tacos of salmon marinated with its skin. Recipe
This week I have had it very salmon, I admit it. But I think it is one of those Christmas ingredients most used but that in less ways we eat. That is, it is a roll to eat salmon at Christmas because we always eat it in the two or three classic ways. Which is why I've made a few slightly different recipes, like these skin-marinated salmon tacos.
The "with her skin" thing, I really didn't know what to call it. It is not that the salmon has its skin and has marinated it all together. Otherwise, I have used the salmon skin itself, grilled to make it hard, as the base of the appetizer.
- For every 100 g of fresh salmon (cut from the loin), 2 tablespoons of soy sauce, 3 tablespoons of rice vinegar and 25 g of fresh chives.
How to make marinated salmon with its skin
We strip the piece of salmon from the skin. We clean it from the darkest areas and cut it into cubes.
In a bowl we put it to marinate with the vinegar, chives and soy sauce. You will see how in about 15 to 30 minutes it will have taken color from how it was cooked. That's from the vinegar. But inside it will still be with the soft texture of fresh salmon.
While we make the skin of the salmon in the pan so that it is like a crust.

At the end we mount the marinated salmon with chives on the skin. The bad thing is that the skin has shrunk and therefore it is possible that we have pieces of salmon left over. In that case we can serve it in teaspoons for example.
