Hake tagine with vegetables. Recipe


This recipe for hake tagine with vegetables has convinced me that one of the ways I like to eat fish the most is in stews with broth and spices. Also, I admit that I wanted to see how rich they come out with this preparation.

Ingredients for 4 people

  • 600 gr of hake fillets, 1 leek, 1 green pepper, 1 spring onion, 1 tomato, 2 carrots, 4 dates and 4 prunes, 2 tablespoons of ras el hanout spices, 250 ml of fish broth, two tablespoons of tomato fried, a sprig of rosemary.

How to make a hake tagine with vegetables

We start by chopping the vegetables into very small pieces, more or less all the same size, and sauté them in the base of the tajine that we will have on the fire, with a little extra virgin olive oil. We put the dome in the tajine and let them simmer for about 5 minutes. When they are more or less poached, we add the powders ras el hanout and mix well. We taste and rectify salt.

Cut the hake fillets into small portions, and arrange them on top of the tajine, sprinkling a little salt. Add the rest of the broth and distribute the plums and dates. We put the dome back on the tajine, and let it cook for about 5 minutes.

We turn off the heat, put a sprig of rosemary in the center of the tajine, and let it rest for about 5 minutes with the dome on so that the flavors settle well. We bring to the table and uncover at the time of consumption.
