Chocolate cake with whiskey and maple syrup chantilly: recipe

I do not know that they have chocolate cakes, that they are of the format that they are always successful. And since I am well acquainted with it, when I want to make my guests happy I already know that I must take the bag of chocolate topping and get down to work. The other day I decided to make a chocolate cake with whiskey and maple syrup chantilly, perfect to close any meal.

This tart, a kind of giant tart, consists of two layers each more delicious, the first one a 70% dark chocolate ganache with a touch of whiskey, perfect for the most chocolate makers, softened with a chantilly sweetened with a base of maple syrup, which makes a simple whipped cream take on a different texture and taste.

  • Maple syrup, 2 tablespoons (For the chantilly)
  • Liquid whipping cream (For chantilly) 200 ml
  • Whiskey, 1 tablespoon (For the chantilly)

How to Make Whiskey Chocolate Cake and Maple Syrup Chantilly

We will begin by spreading the shortcrust pastry in a detachable 18-centimeter-diameter pie pan. We prick the base and leave it in the fridge while we preheat the oven to 180 degrees. Once the temperature is reached, we bake the dough for 15 minutes, to which we will have previously placed an oven paper with some dried vegetables so that it does not swell. We remove from the oven.

To make the chocolate ganache, we melt the chocolate in the microwave at short intervals of about 15 seconds, once melted, add the beaten egg, the cream and the whiskey. We remove and pour over the baked dough. We cook for 12 minutes at 170 degrees. Let it cold down.

For the maple syrup chantilly, in the bowl of a blender add the cold cream with the cream cheese, beat until it peaks, then add the maple syrup and the whiskey, gently stir and dispose of it irregularly on top of cold ganache.
