Strawberry cake with cream

We are in the middle of the strawberry season and we must enjoy all the gastronomic elaborations that we can make with this appetizing fruit. A great recipe to enjoy with them is the Strawberry Shortcake with cream. It is easy to make and we will all enjoy a delicious dessert.

The preparation Prepare a tart pan, spread it with a little butter and flour, then line the pan with the shortcrust pastry, make sure it fits tightly and prick the bottom of the pan with a fork. Roll the rolling pin over the edge of the pan and remove the excess dough. Lay a sheet of baking paper on top of the dough and top with dried chickpeas so that when you bake the dough it won't bulge.

Bake for 15 minutes or until you see that it is golden brown and remove it. Remove the chickpeas and paper, then let it cool. Meanwhile, beat the yolks with the sugar and add a glass of milk and cornstarch.

Stir all the compound until you see it dissolve and then add the rest of the previously heated milk. Put all the compound in a saucepan and cook over low heat while stirring until you see it thicken, then remove from the heat and allow to warm.

Fill the shortcrust pastry that you prepared with the cream and cover the entire cake with the previously washed strawberries and cut them into sheets. Now mix a glass of cold water and the gelatin in a saucepan and heat until dissolved.

Pour the gelatin over the strawberries and leave the cake for a couple of hours in the fridge.
