Special cake of pears and lemon cream, easy and quick dessert recipe, ideal for celebrations


The first time I made this cake, I gave it to my mom celebrating Mother's Day. It was at a family meal we had at home that I invited my mother and sisters to eat with me and to top it off, I surprised them with this special pear and lemon curd cake.

As pears do not have a very powerful flavor, it is very good to combine them with a lemon cream so that the contrasts of flavors that I like so much come into play. As for the result, I can only tell you that in addition to eating her portion and repeating, my mother took all the cake that was left over. I tell you how to prepare it, which is very simple.


For 6 people
  • Shortbread dough or pasta (chilled) 1 package
  • Lemon curd or lemmon curd (see below) 10 tablespoons
  • Pear 8
  • Apricot jam to glaze
  • Eggs to make the lemmon curd or lemon cream 4
  • Sugar to make the lemmon curd or lemon curd 250 g
  • Lemon juice to make the lemmon curd or lemon cream 230 ml
  • Butter to make the lemmon curd or lemon cream 90 g

How to make a special pear and lemon cream pie

We start by preparing the lemon cream, for which we mix all the ingredients well without beating too much and we put them in a water bath, stirring the mixture until it thickens to our liking. It should be more or less like a light pastry cream. In about ten or fifteen minutes we will have it ready.

While we make the lemon cream, we can line our baking mold with the shortening, puncture the bottom with a fork so that it does not rise and put an aluminum foil, baking at 180º for 10 minutes. Then we remove the aluminum foil and leave it for another 5 minutes.

We remove the base of the cake from the oven and put a good layer of our lemon cream on it and cover with the pears that we will have peeled, cored and cut into slices. Of the lemon cream that we have prepared, we will have approximately half, so we will save it for other desserts, because it is delicious.

We put the cake in the oven for five minutes at 180º and then we raise it to the upper zone to grill it for another two or three more minutes. We remove the cake, glaze it while still hot with the apricot jam to give it shine and let it cool down before taking it to the table.

This special pear and lemon curd cake is delicious. I recommend that you save it for dessert because as you taste it hungry, you will eat it whole. It is also better than about because with a coffee or tea it is excellent for a snack.
