Easy nocilla pie

We do not always want to get involved in the kitchen and having recipes like this easy nocilla pie can solve a dessert without the need to mess up. It does not require more than to beat a few eggs well, mix them with nocilla and bake the mixture on a classic base of biscuit and butter which, if we are in a hurry and want to simplify even more, we can do without.

An important tip when preparing this easy nocilla pie is the choice of the mold. It should be, for the indicated quantities, between 24 and 26 cm in diameter. In this way the filling will cook evenly and will not be raw inside. If you do not have these sizes, you can always choose to make two in smaller molds.

As we mentioned in the introduction, the incorporation of the base is totally optional. Nocilla's easy tart can be made without it and can make this recipe even easier. However, since it is the preparation of the biscuit base is very simple, we have decided to incorporate it and thus give a little consistency to this cake.

We crush the cookies with a food processor. If we do not have it, we can put them in a plastic bag and crush them by hand with the help of a roller. Add the butter together with the cocoa powder and crush or mix again until you get a homogeneous mixture. If the result is a dry paste, we will fix it by adding a little more butter.

We line the base of a 24 cm mold (better removable) with sulfurized paper and spread the cookie dough over the entire surface. We heat the nocilla in the microwave, on low power. We beat the eggs until white and add the nocilla little by little. We incorporate it with enveloping movements, gently so that the eggs incorporated with the shake do not lose the eggs.

We fill the mold with the egg and nocilla mixture and introduce it in the central part of the oven, pre-heated to 180ºC. Cook for 30 minutes before covering with aluminum foil and finish cooking with 10 more minutes. We open the door slightly and let the cake warm inside for 30 minutes before removing, cooling, unmolding and serving.
