Chocolate and raspberry ganache tart: recipe without oven

We will start preparing the ganache. For this we melt the two chocolates in the microwave at short intervals and half power, stirring occasionally so that they do not burn. Once melted, we reserve.

On the other hand we heat the cream. We are adding it three times to the mixture of melted chocolates and stirring vigorously with a silicone spatula so that the emulsion is made correctly and gives us a silky, smooth and shiny mixture. We reserve the ganache covered with a transparent film stuck to the surface of the cream, for about four hours in the fridge until it crystallizes.

For the base, in a grinder or kitchen robot we crush the Oreo cookies with their filling, until they form powder. Add the melted butter and stir until a paste forms. With it we line the base and sides of a removable mold or a pastry ring 18 centimeters in diameter, this one better lined on the inside with acetate tape so that later we can easily unmold it.

Chill the dough for an hour in the fridge to lock the butter. Once the time has passed, we toss the ganache in the biscuit base and decorate with fresh raspberries and chocolate pearls or pieces of cocoa grue.
