Whipped cheese cake: very easy French recipe for a well liked meal


That France is a cheese paradise is no secret. No matter how chauvinistic we are about Spanish cheeses, the general quality and, above all, the variety of Gallic cheeses have no point of comparison.

Nowadays it is easy to find world-famous cheeses in Spain such as comte, morbier or reblochon, but there are many other varieties that either do not exist in our shelves or we find another name. Is this the case of fromage blanc, literally "white cheese", the protagonist of this recipe.

He fromage blanc It is a type of fresh cheese in which fermentation is stopped, so hardly any fat is formed. Many varieties are mixed with cream to give it more flavor, but it is also sold in a skim version. In appearance, and even in taste, it is more similar to Greek yogurt than most cheeses and, in fact, it is found next to it in supermarkets.

In France, fromage blanc is eaten almost like yogurt, or to spread on bread and with jam for breakfast.

In Spain there is no cheese with this denomination, but there is a product that is sold in many supermarkets under the name of "whipped cheese" which is practically the same, and is ideal for this recipe. Quark cheese, found in some supermarkets, is also very similar. In the absence of these, it can also be made with cream cheese (although the result will be somewhat less light).

For the rest, the elaboration - which we have found in a book of country recipes in the department of Lot et Garonne, in the southwest of the hexagon - has no mystery whatsoever. And it can be customized to taste, adding other ingredients to the base mixture of cheese and egg such as fruits (with figs it has to be a delight), nuts, meat or fish, as if from a quiche -which it looks a lot like- it will be.

How to make white cheesecake

In a bowl, mix the cheese, eggs, and a handful of minced fresh mint (or another aromatic herb like oregano or basil) well. Season to taste and add a pinch of nutmeg. On this base mixture you can add other ingredients.

In a pie dish, on parchment paper or with butter, spread the shortcrust pastry. Pour in the cheese mixture.

Put the cake in the oven at 200ºC and cook it for approximately 45 minutes, or until the dough is crisp and the surface begins to brown. Serve immediately.
