Ham tart tatin with shallots
A rich recipe, ideal for an informal lunch or dinner, is the ham tart tatin with shallots. Easy to prepare and its flavor will delight you and your guests.
The ingredients 200 grams of flour, 150 grams of butter, 1 clove of garlic, 1 egg, 1 kilo of shallots, 3 slices of ham, 50 grams of sugar, 10 leaves of sage, salt and pepper.
The preparation Peel and mince the garlic clove, mix the flour, the egg, ½ teaspoon of salt, 100 grams of butter and the minced garlic. Work the whole set until you get a consistent and homogeneous dough. Form a ball with the dough, wrap in cling film and put it in the fridge for 60 minutes. Peel the shallots and confit them in a pan with the remaining butter, a little salt and pepper over low heat with the pan covered.
When you see that the shallots are tender, sprinkle with the sugar and continue cooking over high heat, uncovering the pan and stirring constantly until you see that they have caramelized.
Cut the ham into long strips, place the shallots in the base of a cake tin and place them with the ham strips and some sage leaves. Remove the dough from the fridge and spread it out on a previously floured surface.
Cover the preparation of the mold with the dough and cut the excess from the edges. Prick the entire dough with a fork and bake in the oven previously preheated to 200º C for about 20 minutes or until you see that the cake is just right.
Now you just have to unmold and serve hot, garnishing with some sage leaves.
