Roasted white veal with mustard onion sauce, a surprising (and very simple) roast for the whole family
Some time ago I bought a delicious mustard in Ghent during a trip to Flanders, and in addition to using it to season sausages, sausages, meats and other products, I already thought about using it to cook with it. So, I have prepared this recipe for roasted white veal with mustard onion sauce and the result has been as delicious as it is appetizing.
This mustard that is bought in bulk in a square in the city of Ghent in Belgium is really powerful, but you can make the same or very similar recipe using Dijon mustard or if you prefer old mustard, tarragon mustard or any other mustard that you like it.
The result, -whose flavor has nothing to do with the mustard when mixed with the sweetness of the onion and the juices of the roast, - is a tender and perfumed meat with a delicious sauce that is unforgettable.

To make this recipe, it is essential that the onion is cut very thin, in julienne strips that are practically threads, so that the onion can be confit in the oven, while the meat is being roasted. So the first thing is to cut the onion and place it on the base of a baking dish adding a pinch of salt.
The hip tail piece is usually a small piece, which in the case of white suckling beef may be very small, but it is tender and delicious for a simple roast like this. Varnish the piece with mustard, spreading it over the entire surface. Brown the meat in a frying pan and then place the piece on the onion bed.
Add 5 tablespoons of extra virgin olive oil and bake at 180º (with the oven preheated and heat up and down) for 45 minutes. Let the meat rest for 10 minutes and fillet it. Prepare the sauce, reducing the juices of the cooking and those that the meat releases when cutting it together with the candied onion. Try and rectify salt and add an extra tablespoon of mustard if desired.

In this type of meat roast, I prefer to find the stumbling blocks of the sauces, but if you want you can pass the sauce through a mash and leave it homogeneous.
