First of all, it will be convenient for me to explain the why from the title of this entry; Well, one of my favorite desserts is Tiramisu (if you haven't tried it yet, you don't know heaven made into flavor), and I've always made it with the Thermomix, which is the image that you can see on your left; But a few days ago I took a mini vacation in a beautiful town on the Costa Brava, specifically, in L'Estartit and look where, eating at a restaurant called El Portitxol, I found that they had Tiramisu on the dessert menu. You are right, I did not doubt it for a moment and I asked it, it is the image on the right; The presentation already surprised me but I will tell you that the flavor is simply unsurpassed. The chef, of course, did not reveal the secrets of the preparation to me, therefore, I leave you below the address of the restaurant in case you go through the area and in the meantime, for those of you who have the Thermomix, here is the recipe.

Ingredients: 100 grams (1 cup) of sugar, 5 egg yolks, 500 grams of Mascarpone cheese or Philadelphia cheese, 1 teaspoon of vanilla sugar, 24 sponge cake or 2 sheets of sponge cake, 200 grams of strong coffee, 50 grams (1 / 2 goblet) of liquor (rum, amaretto, grappa, etc), a pinch of salt and 50 grams of unsweetened cocoa, to garnish.

preparation: Pour the sugar glass into the Thermomix glass and glaze for 20 seconds at speed 5-7-9 progressive. Next, put the butterfly on the blades and add the egg yolks, the cheese, the vanilla sugar, the salt and program 30 seconds at speed 3 (it must be like a whipped cream). Pour into a bowl and reserve in the refrigerator. Next, soak the cakes in the coffee mixed with the chosen liquor and cover a transparent mold base with part of them. Finally, pour part of the previously reserved cream over the cakes and cover again with the rest of them, cover it again with the remaining cream and cover the mold with a transparent plastic sheet and put it in the refrigerator until the next day. Before serving the tiramisu, sprinkle the entire surface with cocoa and a few chocolate shavings.
