Potato toñas: a spectacular snack


Toñas are sweet brioches typical of the Levantine area, with a white and spongy interior, and a sugary outer layer of toasted color. I assure you that it is worth waiting all the necessary hours of rest to prepare them, because they are absolutely delicious and they keep very well for two days.

As crazy as it is to turn on the oven in the middle of summer, I had a hard time resisting the temptation to bake these delicious potato chips. I explain how to make them with and without Thermomix, so that you have no excuse to stop doing them. If you launch with the recipe, I assure you that you will not regret it.


For 3 units
  • Powdered sugar 150 g
  • Grated lemon peel 1
  • Grated orange peel 1
  • Peeled and chopped potato 300 g
  • Extra virgin olive oil 120 g
  • Egg 3
  • Fresh pressed yeast 30 g
  • Force flour 500 g
  • Salt a pinch
  • I beaten egg 1
  • Sugar dipped in water 3 tablespoons

How to make potato toñas

We start by boiling the potato and draining it. We put it in a large bowl with the oil, the eggs, the icing sugar and the lemon and orange zest. We knead with our hands, crumbling well until we get a uniform dough. If we use the Thermomix, we put the same ingredients in the glass and mix 2 min / speed 4.

Add the flour and knead until you get a uniform dough, it will be quite soft and sticky. If we use the thermomix we add the flour in two batches. First add 250 to the glass and mix 1 min / speed 6. Then add the remaining 250 g and the pinch of salt and knead at spike speed for 2 minutes.

We must let this dough rest for about an hour, until it doubles in volume. After this time, we grease the work table and knead the dough to remove the air. We divide it into three pieces and form three balls.We place them on a baking tray covered with parchment paper and let them rest for another hour.

After this time, we paint them with beaten egg and sprinkle them with the moistened sugar. We bake them for 20 or 25 minutes in a preheated oven at 180ºC. We remove them from the oven, let them warm and we can serve them.

With what to accompany the potato toñas

The mass of these potato toñas is so soft that they can be served with any accompaniment, as with the heat it is doing it is a bit strong to take it with a hot chocolate, I advise you to accompany them with a scoop of your favorite ice cream. You will not find a better snack!
