Loggerhead cake. Recipe

As I have already mentioned to you, my wife hails from Vega de Baja, specifically from Orihuela. And from time to time he asks me to make him typical recipes from that area. And as always everything is very rich. In this case I wanted to make the recipe for Torta boba.

The log cake is a sponge cake that is very fluffy, soft and with a high degree of humidity. It is characterized by carrying milk, oil and flavorings such as lemon zest or cinnamon.

Ingredients for a 22 cm mold.

The recipe was provided by my wife's grandmother and she gave it to me in "cups", so I have converted it to grams. You will need 250 gr of sugar, 3 eggs, 125 ml of Extra Virgin Olive Oil (EVOO), 150 ml of milk, 300 gr of flour, 1 envelope of yeast (Royal type), the zest of a lemon (or an orange), 1/4 teaspoon of cinnamon mocha and butter to spread the mold.


The keys to making the log cake will be to get a perfect shake of the eggs and to control the temperature and time of the oven. If we consider this, we can start.

We beat the eggs and control that they increase at least 3 times their volume. Then we add the sugar several times (two or three). When it is well mixed add the EVOO (I have used Arbequina, a very mild variety) and milk, we continue mixing. Then we incorporate the sifted flour and the yeast envelope. Mix well again. And finally we add the zest of the lemon or orange (controlling not to grate the white part that would give unnecessary bitterness) and the cinnamon. Personally, I prefer the zest of the orange, which in addition to being cheaper than the lemon, gives it a much richer and smoother touch.

It only remains to smear the mold with butter and introduce for about 50 minutes in a preheated oven at 160 ºC. When removing it, it should be slightly golden on top, you will see that it will look like a giant cupcake (saving the differences). And if we introduce a skewer in the deepest part it should come out dry.

I advise you to make the log cake recipe for breakfast mainly. Well wrapped, it lasts at least 4 days in perfect condition. And it is also a very homemade and healthy way to accompany juice and coffee or milk.
