Cod omelette, easy and tasty recipe

In the next few days I also have several recipes with this wonderful fish planned, but today it is one of my favorite recipes, which in addition to being delicious is very easy to prepare, the cod omelette.

The cod can be desalted at home. In my case, for these recipes, I buy a good cola, dislodge it and remove the skin and the bones myself since it is much cheaper than buying flaked cod or a good loin, which I see is more appropriate for recipes where it should look more like pil pil, Galician style, in Biscay sauce ...


For 2 persons
  • Desalted cod flaked 200 g
  • Shallot 4
  • Eggs 1
  • Colored peppers 1
  • Extra virgin olive oil 15 ml
  • Salt

How to make cod omelette

In a frying pan we put a little olive oil and sauté the shallots and the small chopped pepper. Once everything is poached we add the crumbled cod making sure that it does not have any spines. Sauté the whole for five more minutes.

We pass the mixture to a drainer to release all the oil. We leave a few drops in the pan, enough so that the tortilla does not stick. We beat the eggs and add a pinch of salt, add to the cod mixture and add to the hot pan.

We make the tortilla on both sides for a few minutes, leaving it to the point that we like. In this case I left it quite juicy because we love it like that, whatever type it is. We serve hot or cold, as we prefer.

With what to accompany the cod omelette

The cod omelette can be eaten with a varied salad. It is perfect for a dinner, but also as a starter in any meal we have as a family, so I recommend that you do it, it will not disappoint you. If you serve it with a cool white wine, even better.
