Spinach and white bean omelette. Recipe
We have already started with the less copious and quicker meals to make, that with so many holidays I always have the feeling that I have a lot of things behind me and that I don't have much time for anything, that I am always late for everything. Hence the need to cook things that don't take much time, like this spinach and white bean omelette.
I have to say that I had never tried this recipe, until we organized a meal between co-workers where each one of us brought something. And I must confess that when Montse said that she would bring a spinach and white bean omelette, I wrinkled my nose a little, it is a combination that would never have occurred to me and that was worth discovering.
300 grams of cooked white beans, 500 grams of frozen spinach, 1/4 onion, 8 large eggs, 1 clove of garlic, olive oil, salt and pepper.
Boil the spinach in salted water. We drain them and reserve them.
Chop the onion and garlic and sauté them in a large frying pan with a drizzle of oil. When the onion begins to brown, add the cooked spinach and fry it.
Next we add the white beans, stir and mix well with the spinach and let them toast a little bit and season.
We beat the eggs in a large bowl and mix it with the spinach and beans, turn over to the pan and let them cook over low heat.
We serve the spinach and white bean omelette, very hot and accompanied by a seasoned tomato mince.
