Toasts, one of the many Mexican specialties, are part of everyone's family gastronomic culture. There is a wide variety of toasts such as chicken, which we will make today, as well as beef, shrimp or pork. Tortillas are usually made of corn although at present, we can find some variants made with prickly pear.
The recipe that I propose today is that of some classic chicken toasts. We are going to add bell pepper to give it an even more intense flavor and a lot of color. To make this dish you will need corn tortillas and green sauce. You can find them in the Mexican products sections of the vast majority of supermarkets.

We are going to boil the chicken breast in a pot with water and salt for about 25 minutes. We remove it from the water and we rip. They reserve. Now we are going to devein the pepper, cut it into cubes. We also cut the chili and put both to fry, over medium low heat, in a pan with a little olive oil. After about 10 minutes we add the shredded chicken, stir and season with salt and pepper.
Let's grind the beans to heat them in a pot with a tablespoon of oil. We leave them about five minutes over medium heat. Heat a frying pan with oil and now fry the tortillas on both sides until crisp. When all the ingredients are ready, we assemble the toasts. For this we cover the toast with beans, immediately place the chicken with pepper. Add avocado pieces, a little green sauce and serve.
