This weekend I have prepared some crumbs with sardines and I have roasted more sardines to prepare this recipe of three in one of sardines, which, obviously, are actually three recipes. A sardine toast recipe, a cold sardine salad recipe, and the grilled sardines themselves. Soon the sardines will no longer be in good time and we will have to do without them, so I am conscientiously saying goodbye to them.

This is one of the many ways that the kitchen can help us save both time and money. Often we miss the opportunity to take advantage of an elaboration to solve another meal. As in this case, we get 2 more meals from a rest of sardines.

Let me tell you.

The ingredients

1 kg of sardines, a handful of coarse salt, 2 chopped ripe tomatoes, 1 chopped chives, 2 tablespoons of capers, toast, EVOO (extra virgin olive oil), Sherry vinegar.

The preparation of the three in one of sardines

First, we place the sardines, whole, on a tray and sprinkle them with coarse salt, leaving them like this for 1 hour. After this time, we roast them over a high heat, round and round. Here's the first recipe, grilled sardines. We can enjoy it accompanied by some crumbs or a salad. We will reserve 4 sardines.

We clean the reserved sardines, skin and thorns. We put a tablespoon of chopped tomato on toast, a sardine fillet on it and some capers on it. We water with EVOO and we already have the second recipe, sardine toast.

We must still have two clean sardines that we will mix with the rest of the tomato, capers and the chopped chives, we dress with vinegar, EVOO and salt, et voilá, we already have the third recipe, cold sardine salad, which we will put to cool for dinner .

The tasting of the three in one of sardines

The first recipe for roasted sardines should be eaten hot, the salt that has been bathing them for 1 hour makes them tasty and juicy. As for the second recipe for sardine toast, it is a succulent appetizer accompanied by a very cold chamomile or a Fino. The third recipe for cold sardine salad is delicious when cold. We can accompany it with a boiled egg and take it as a single dish, for example for a dinner.

The idea is, as I mentioned before, to recycle surpluses, reuse food and reduce expenses and efforts. Overall, being ecological also within the kitchen, after all, is the most consistent behavior, don't you think?
