Crispy asparagus with soft boiled eggs. Recipe


Sorry to be repetitive but I keep hallucinating with the book At home with Jamie and you have the example up there, a recipe for crispy asparagus with soft-boiled eggs.

It is an aperitif that can be served as a starter. It is also very attractive, you can not say no. And it will surprise more than one of our guests.

Ingredients for 4 people

  • 12 asparagus, 6 slices of thin bacon or smoked bacon, 6 slices of Iberian ham, 8 free-range eggs, salt, black pepper and olive oil.

Preparation of asparagus with poached eggs

We start by preheating the oven to 200 ºC. While we wrap the asparagus with the bacon and ham slices. In total six of each type.

We put them on a baking tray and paint them with a little olive oil. We put them in the oven for about 10 minutes or until the bacon is golden and crispy.

While we cook the eggs. We introduce them in the boiling water with a little salt. In the photo you can see two eggs that have been cracked and two that have not. This is because two of the eggs, the ones that haven't been cracked, were at room temperature and the other two were cold from the fridge.

We count 4 minutes from the moment the water boils again. When time passes, we refresh them to prevent them from continuing to cook. We marry them lightly and remove the tip. We serve it hot as soon as the asparagus is ready.
