Cava and raspberry truffles, quick and easy recipe for Valentine's Day

Well, today is Valentine's Day and for those of you who celebrate it and still lag behind without knowing what to prepare, I bring you this recipe for cava and raspberry truffles, great! They are made in a moment and since they do not need a lot of refrigeration time, they are the perfect option for last minute rush.

In this case I wanted to decorate them with colored anise balls for the occasion, but of course it can be done perfectly with cocoa powder or chocolate shavings as is usually done, so this step is up to you.

Ingredients

For 12 units
  • 70% cocoa dark chocolate 100 g
  • Liquid cream 80 ml
  • Digging 30 ml
  • Icing sugar 25 g
  • Butter 5 g
  • Dehydrated raspberries 25 g
  • Pure cocoa powder

How to make cava and raspberry truffles

Heat the cream with the sugar until it boils. In a bowl we cut the chocolate and pour the hot cream on top while stirring with some rods so that the chocolate completely dissolves. Add the butter and the cava mix completely.

We pour the mixture into a tray, add the raspberry, stir and refrigerate until the dough has hardened (the thinner the surface, the earlier it cools). Once we have the curd dough, we make balls of equal size with a spoon and shape into a perfect ball with our hands, taking care not to give the dough too much heat.

Finally we coat each truffle in what we prefer: cocoa powder, shavings, anise balls, etc. Refrigerate until the moment of taking in an airtight container or tuper so that the chocolate does not get wet.

The cava and raspberry truffles should be kept in the fridge so that they do not spoil. To take them we can take them out a few minutes before and so they will not be so fresh. They are kept in perfect condition for several days, so they can be done in advance.
