- Sliced torrijas bread, from the day before 10
- Clarito coffee with milk 500 ml
- Sugar 30 g
- Chocolate cream liqueur a splash
- Olive oil 1 l
- Eggs 2
- Liquid whipping cream 100 ml
- Mascarpone cheese 200 g
- Icing sugar 20 g
- Cocoa powder or chocolate chips
- Fresh mint

We cut the loaf of bread into ten slices of approximately a centimeter and a half or two. Lightly heat the coffee with milk and add the sugar and a splash of Baileys liqueur. Temper before pouring into a large bowl and placing the slices of bread on top, turning so that they are well soaked. We let it rest for a couple of hours.
We beat the eggs in a deep bowl, pass the slices of bread on both sides and fry them in plenty of hot olive oil (at 180ºC), on both sides. We drain well on blotting paper to remove excess oil.
We prepare the mascarpone cream with which to garnish the torrijas. For this we whip the cream with the icing sugar and add the mascarpone. We stir until homogenized and put in a pastry bag. We serve the torrijas with the cream, sprinkling with cocoa or chocolate shavings and decorating with some mint leaves.
